Broccoli, Carrot and Potato Curry (low-sodium, low-fat)
When I made this dish I didn't really measure any ingredients out. . . I'm sorry :( I'll write what I think I relatively put into the mixture. If you want to make it, I suggest just using this recipe as a guide line and taste testing the whole way through! It was DELICIOUS!
- 1 cinnomon stick
- 1 cup basmati rice, dry
- 1/4 white onion, diced
- 1 garlic clove, minced
- 1/4 cup water
- 4 tsp lemon juice
- curry powder, as desired
- cumin powder, as desired
- chili powder, as desired
- coconut sugar, as desired
- cinnamon, as desired
- 1 medium-large potato
- black pepper
- 1/2 unsweetened, low-fat coconut milk
- shredded unsweetened coconut flakes, as desired
- as many baby carrots and broccoli as you want
- Boil basmati rice in a separate pot
- Cook onion in a non-stick pan for five minutes.
- Add in minced garlic, lemon juice, water, all the spices, and coconut sugar and cinnamon and stir on low heat
- Boil or microwave the potato and blend it in a blender
- Add blended potato to the pan and stir it in, making one mixture
- Add coconut milk and black pepper and water if it is very thick
- Steam carrots and broccoli in a separate pan
- Add broccoli and carrots to mixture
- Taste and add spices if desired
- Pour curry over basmati rice and enjoy!
Raw Vegan Sushi
Ingreidents:
- 5-10 nori sheets
- 1 zucchini, sliced
- 3 large carrots, sliced
- 1/4 avocado, sliced
- 1 gala apple, sliced
- 1/2 bell pepper
- purple cabbage
- soy sauce
- water
- Pick any of the ingredients you want, throw them on the nori sheet. . . ROLL and SLICE! (place flowers on them, snap a pic, post it to insta) yum x
